Chickpea bread in Korça, a centuries-old tradition

TIRANA, August 31 – Bakeries have been part of life in Korça for hundreds of years. Around 1850, the city had several bakeries in Varosh, Kasaba and the former Çarshia. They prepared bread as well as meat dishes, beans, tripe and other traditional foods.

Historical documents show that Korça bakers made different types of bread during that period. Chickpea bread was among them. Bakers made it with chickpea and wheat flour. Several bakeries still preserve the tradition today.

Petrika Pitushi is among those keeping the craft alive. He has worked as a baker for 52 years and continues to make bread using traditional methods. He said the bakery where he works has produced chickpea bread since 1900. He inherited the craft after previous generations of the family emigrated to the United States.

Pitushi continues to prepare chickpea bread according to the old recipe. The bread preserves both its traditional taste and preparation method. His work shows how traditional crafts can survive when generations pass on their recipes and skills.
